Easiest Ever Chia Pudding

As much as we all seem to love Chia pudding, if eaten on its own it often fails to satisfy, and personally, I find it feels a little like eating frogspawn. However, I have been experimenting with this supposed superfood pud and I think I have come up trumps ūüôā

Which is great because chia seeds are amazing as they are packed with fibre, health omega fatty acids, potassium, and magnesium. What is more, chia seeds are great for boosting energy and endurance, and can help to regulate digestion and metabolism.

To make my chia pudding, I combine chia seeds with oats which not only stops my chia pudding from being quite so reminiscent of frogspawn, but also amps it up in terms of how filling it is, and in terms of how much energy it provides- really important if you are active and are looking for a breakfast (or snack) to fuel you for the day ahead.

To really make my chia and oat pudding taste amazing I love to mix in some frozen berries, and top it off with coconut yogurt, nuts and raisins, seeds and an obligatory dollop of nut butter.

To make the above chia and oat pudding you will need:

  • 1/2 old fashioned cup oats
  • 2 tbsp chia seeds
  • 1/2 cup milk (dairy or plant based both work well)
  • 1/4 cup frozen berries
  • Toppings of your choice- here I used coconut yogurt, nuts, seeds, granola and nut butter

Combine all of the ingredients (bar the toppings) and leave for at least a couple of hours, or overnight in the fridge. When you are ready for your breakfast, or for your snack then remove the pudding from the fridge, top with your favorite things and enjoy!

What is not to love?

I really enjoyed dipping my Laiki crackers in some peanut butter and sandwiching them with apple slices. But you could also try dipping them in chocolate- a recent addition to the Laiki Facebook page!

As mentioned Laiki crackers are made from Thai black and red rice which means the crackers are also packed with more nutrients and flavor than crackers made from white or brown rice. Literally the ingredient list is rice, oil and salt.

There are lots of Trail Mix’s on offer from Tribe. Check out their site for the full range. I was sent the Lauga Trail Mix¬†in my Tribe Pack which combined cacao dusted seeds, nuts and raisins to create a great endurance boosting snack.

This trail mix was named after a mountain marathon in Iceland that Tribe’s Guy ran in 2011. The mix was built for tough adventures, and is packed with good fats, protein, fibre & carbohydrate. Natural source of vitamin E, which helps defend cells from oxidative stress.

I enjoyed sprinkling the pack over my morning smoothie bowl to give it a great crunch, and healthy fat and protein boost.

There is research to suggest that distance runners can benefit from taking in fats (like those in the Lauga Trail Mix) for fuel- so I am more than happy to jump on that band wagon! For more interesting tips and nutrition facts head to the Tribe blog now! 

In my Tribe Pack I also received the Cacao Almond energy bar. It was dense, sweet and delicious! Combining only natural energy giving ingredients, I was able to really enjoy the bar knowing that it was doing my body good. The bar has fueled Tribe adventurers taking on ultras across Iceland, trans-Moroccan bike rides, and a 2000 mile triathlon- so it was great fuel for me on my long run this weekend! I love the vanilla flavor, however the chocolate flavored protein is ideal for creating chocolaty desserts like this post workout pudding:

This pudding is smooth and delicious. It is a great way to refuel after training. With the Vega Protein this dessert is nutrient dense and the perfect way to get what you need into your body after a workout. The pudding recipe is on the Vega site. You can easily blend it before your workout, let it set in the refrigerator and then enjoy it once you get back.

Hemp Protein and Informed Choice  

Interestingly Vega doesn’t incorporate hemp protein in their Vega Sport Performance Protein because although they think that¬†hemp is a pretty awesome source of plant-based protein, they¬†wanted to give athletes assurance that all products in the Vega Sport system would be safe to use both in training and competition. Blueberry Bliss bars blend of all that is good ‚Äď good tasting, good for you! I loved taking one of these bars with me to college as they made for a great snack to curb between-meal cravings.

That’s it bars are convenient snacks that can be taken with you to work or school. They also make for great additions to meals. I loved having my That’s it bars with extra fruit, and an a splash of nut or seed butter. My Favorite Indulgence

The final flavor that is on offer from My Favorite Indulgence is Pumpkin- Spice. This is a flavor that I have only really learnt to appreciate since being in the US. The granola is sweet, yet spicy- thanks to cinnamon, nutmeg and ginger.  I loved it! It also had a load of dried cranberries in this mix which really added to the sweet goodness of the granola!

The Best Black Bean Protein Brownies….Ever

Valentine’s Day is a day for love, lust and chocolate!

I doubt you would ever think that beans would feature, and I too initially thought that putting beans anywhere near a brownie tray would be ludicrous, but, after seeing post after post about how amazing black beans can be in dessert, I had to try it out, and boy was I pleased that I did!

These brownies are super¬†simple to make and only require a few¬†ingredients that you probably already have in your cupboards. Equipment wise, all you need is a food processor (or a blender) and a cake tin/ brownie tray or even a muffin tin. These brownies are super versatile- you can make them into one ‘traditional’ brownie tray bake, or you can make individual brownie muffins- totally up to you!

This recipe is totally ideal for Valentine’s day because they are great¬†for satisfying your¬†sweet tooth and chocolatey cravings, but they won’t¬†blow your day‚Äôs diet, or leave you feeling guilty and heavy. These brownies are¬†packed with protein from the Sprout Living Epic Protein Powder,¬†full of fiber from the black beans, give you a great dose of healthy coconut oil, and are super¬†low in sugar- so won’t give you that horrible sugar low you can so often get from super indulgent desserts.

Oh, and did I mention that these brownies are: gluten free and vegan?!

Seriously. You have to try them!

Prep Time: 10 minutes, Bake Time: 15-18 minutes, Total time: 30 minutes

To make 12 small, or 6 large brownies you will need:

  • 1 cup of oats
  • 1 tsp baking soda
  • 1/2 tsp instant coffee (optional, but recommended)
  • 3 cups of black beans (about 2 regular sized cans- rinse and drain these really well)
  • 3 tsp vanilla extract
  • 1/4 cup coconut oil (melted)
  • 1/4 cup apple sauce (can sub mashed banana or pumpkin puree here)
  • 2 tbsp maple syrup (optional, but adds a nice sweetness)
  • 6 tbsp Sprout Living Epic Protein Powder
  • 1/4 cup dairy free chocolate chips, or 70%-99% dark choc chunks
  • 1 tbsp chopped nuts (e.g. walnuts, pecans, peanuts)

Here is how to make them:

  • 1. Preheat oven to 350 degrees (170 Celsius)
  • 2. Lightly grease your brownie tin or muffin tins with coconut oil.
  • 3. Blitz your oats in your food processor until they form a flour.
  • 4. Add your black beans, coffee, puree,¬†Sprout Living Epic Protein powder, vanilla extract, syrup and coconut oil. Blitz until well combined.
    1.  NB. You may need to do this in two batches if your blender is struggling.
    2. NB.2. If the batter is too thick add 1tbsp water. The batter should be like thick frosting/ mousse- it should not be runny at all.

  • 5. Stir in chocolate chips and nuts if adding.
  • 6. Spoon the thick¬†batter into your¬†tin and smooth the tops with a wet spoon.

(NB.3. See how dry the batter is ^^)

  • 7. You can add some extra choc chips and nuts on the top if you like!
  • 8. Bake your brownies for between 15-18¬†minutes or until the top is dry, slightly cracking and starting to pull away from the side of the tin.
  • 9. Let cool for about 15 mins before removing from pan.
    • I cut mine into Valentine’s inspired heart shapes, but feel free to cut them into whatever shape you so desire!

  • 10. You can serve straight away, or freeze and reheat as needed.

I would recommend enjoying these brownies with a generous scoop of ice cream for extra decadence, or banana nice cream if you are dairy free. Or why not try adding a handful of berries, some banana chunks, a drizzle of chocolate sauce, or a nice big dollop of nut butter?- all delicious additions that can help take these brownies to the next level.
