Easiest Ever Chia Pudding

As much as we all seem to love Chia pudding, if eaten on its own it often fails to satisfy, and personally, I find it feels a little like eating frogspawn. However, I have been experimenting with this supposed superfood pud and I think I have come up trumps ūüôā

Which is great because chia seeds are amazing as they are packed with fibre, health omega fatty acids, potassium, and magnesium. What is more, chia seeds are great for boosting energy and endurance, and can help to regulate digestion and metabolism.

To make my chia pudding, I combine chia seeds with oats which not only stops my chia pudding from being quite so reminiscent of frogspawn, but also amps it up in terms of how filling it is, and in terms of how much energy it provides- really important if you are active and are looking for a breakfast (or snack) to fuel you for the day ahead.

To really make my chia and oat pudding taste amazing I love to mix in some frozen berries, and top it off with coconut yogurt, nuts and raisins, seeds and an obligatory dollop of nut butter.


To make the above chia and oat pudding you will need:

  • 1/2 old fashioned cup oats
  • 2 tbsp chia seeds
  • 1/2 cup milk (dairy or plant based both work well)
  • 1/4 cup frozen berries
  • Toppings of your choice- here I used coconut yogurt, nuts, seeds, granola and nut butter

Combine all of the ingredients (bar the toppings) and leave for at least a couple of hours, or overnight in the fridge. When you are ready for your breakfast, or for your snack then remove the pudding from the fridge, top with your favorite things and enjoy!

Choc Chip Banana Bread Muffins

Chocolate Chip Banana Bread Muffins that are seriously delicious, easy to make, and just happen to be free of gluten, dairy and refined sugars! Read on so you can make your own!

So, after browsing on Instagram, and seeing so many phenomenal banana bread posts (like those from @amandafitlife and @rachelmansfield), I was inspired to give it a go myself!

As most of the banana bread recipes I came across contained eggs, refined sugars, dairy, grains, gluten or a mixture of all of these things, I wanted to try and come up with a recipe that was free of all of them!

This recipe is not only super simple but also requires very few ingredients. This is always important to me because when I want to bake I don’t want to have to go out and spend loads on getting the things that I need.

Anyway, this is the recipe that¬†I came up with….

This recipe will make 10 mini muffins. If you want to make bigger muffins then go ahead, but remember that you may only be able to make around 4-5- if you want more, or want to make a large loaf then I would suggest that you double the ingredients. Happy Baking!


  • 1 large ripe banana mashed
  • 2 tbsp + 2 tsp nut or seed butter of choice (I used Meridian smooth almond butter in mine)
  • 1 vegan egg (I used the egg substitute mix from NEAT foods)
  • 1 tsp liquid sweetener (Optional- I didn’t use any in my mini muffins)
  • 1 tsp melted coconut oil
  • 1 tbsp + 1 tsp coconut flour (I used Sukrin coconut flour)
  • 1/4 tsp baking powder
  • 2 tbsp + 2tsp chocolate chips or chocolate chunks (I made chocolate chunks with Eating EVOLVED dark choc bar)
  • 2 tbsp seeds/ dried fruit etc (I used pumpkin seeds)

To make the muffins all you need to do is combine all of the ingredients (ensure well combined!) Then place a spoonful into muffin cases and put into a muffin tray.



Once ready, bake your mini muffins for about 20 minutes, or until golden.



Then devour!!

The Artisan Tropic cassava strips also contain only three ingredients, and again have no preservatives or artificial flavors. The cassava strips taste awesome, similar to a potato chip, but with more flavour! Also, as cassava is more fibrous than a potato, they provide a more filling snack experience. I loved using the natural and sea salt cassava strips as dip scoops, and also really enjoyed using them as an alternative to tortilla chips for nachos!

Other products on offer from eatingEVOLVED include a range of chocolate bars, I tried the 85% cacao crunchy caramel and the 100% cacao midnight coconut primal bars and was blown away by how tasty they were! Although the midnight coconut bar was pretty intense, I still enjoyed just munching on squares, and also really liked adding chunks of both of the bars to my nice creams, morning bowls of porridge, cakes, and pancakes. I used a lot of different eatingEVOLVED products in my breakfast today. This colorful glass layered up blueberry chia jam, with oat and chia pudding made with a big spoonful of eatingEVOLVED original chocolate spread and a couple of chunks of an eatingEVOLVED crunchy caramel primal bar, topped off with a dollop of blueberry and banana nice cream, and a generous drizzle of tahini and eatingEVOLVED original chocolate spread sauce. Phenomenal!!

P.s. the chocolate spread from eatingEVOLVED is out of this world! Move over sugar laden fake chocolate spread alternatives, and make way for this dark chocolate and coconut bonanza. The original spread is and made with nourishing coconut oil. I have really enjoyed using the spread as a topping for fruit and nice cream,  and as a spread on pancakes, and toast. To be honest, the spread is even great eaten straight out of the jar!

Apple and Mango That’s it bar

That’s it bars are convenient snacks that can be taken with you to work or school. They also make for great additions to meals. I loved having my That’s it bars with extra fruit, and an a splash of nut or seed butter. My favorite flavor bar was the apple and blueberry one. They are perfectly sweet, and sticky, and made for a great snack between meals. I especially loved the little pockets of blueberries.

My Favorite Indulgence market their granola as ‘World Class’- and they are not joking!

Just like the other granola’s on offer, the nut free variety¬†¬†is sweetened with maple syrup, and is super crunchy- ideal as a topping or as a cereal on its own. You could add your own nuts, seeds, dried fruits to the mix if you wanted to- it would make for a great breakfast or snack on the go!

For a more decadent granola, My Favorite Indulgence created their Chocolate-Mocha granola. It is cleverly blended to allow both flavors to shine, and it still maintains the signature crunch. I loved this granola as a topping to my desserts! It made for a particularly yummy topping to waffles, and banana pancakes!

The final flavor that is on offer from My Favorite Indulgence is Pumpkin- Spice. This is a flavor that I have only really learnt to appreciate since being in the US. The granola is sweet, yet spicy- thanks to cinnamon, nutmeg and ginger.  I loved it! It also had a load of dried cranberries in this mix which really added to the sweet goodness of the granola!
